Some restaurants are designed to impress. The best ones are designed to be remembered — through how they feel, long after the meal is over. Tabule Oakville was designed with that feeling in mind.

Working with the Tabule team, Sansa Interiors created a 2,800 sq ft dining environment that balances contemporary Mediterranean hospitality with the warmth and craft their brand has always stood for. The result is a space that works as hard at 12pm on a Tuesday as it does at 8pm on a Friday — and looks equally good in both.

The concept for Tabule Oakville grew from one question: how do you express a cultural identity without resorting to clichés? As part of a broader restaurant interior design approach in Oakville, we were interested in creating a space that feels authentic without being overly referential.

Mediterranean design has a visual vocabulary that is easy to overstate — terracotta tiles, mosaic, heavy ornamentation. We were interested in something more considered. The kind of space where the influence is felt rather than announced, reflecting a more refined take on Mediterranean restaurant interior design in Oakville.

Our answer was to work through form, material, and light. Arches, rounded corners, and curved millwork become recurring motifs — soft enough to read as contemporary, familiar enough to carry cultural resonance. The palette is muted and warm. Every surface earns its place.

The concept also had a practical dimension. Tabule Oakville needed to serve a wide range of dining occasions — weekday lunches, celebratory dinners, private events. The design had to be versatile without feeling generic. Comfortable without being forgettable.

Layout Strategy: Making a Linear Footprint Work Harder

Long, narrow restaurant spaces are a common challenge in commercial interior design. The instinct is often to divide the space into discrete zones — but that approach can make a restaurant feel smaller and more fragmented than it actually is.

At Tabule Oakville, we took a different approach. Rather than hard boundaries, we introduced transitions — subtle shifts in ceiling height, millwork placement, and seating configuration that guide guests through the space while keeping the overall volume open and coherent.

The bar anchors the front of the restaurant, acting as both a visual focal point and an active social zone. It draws people in and gives the space immediate energy. Behind it, the dining room unfolds: a mix of banquettes, freestanding tables, and a private dining room for larger groups and events. Built-in seating runs along the perimeter, maximizing capacity without compromising comfort.

The floor plan for Tabule Oakville was carefully developed to optimize both guest experience and operational efficiency within a long, linear footprint. How We Worked: Three Challenges, Three Solutions

Construction was scheduled to begin quickly, which meant the entire design process — layouts, finishes, custom millwork details — needed to be resolved in a compressed window. This required clear decision-making frameworks from the start and close coordination between the design team, client, and contractor. We delivered a fully resolved set of design documents on time, without compromising the level of detail the project required.

Maximizing covers in a long, linear space without making it feel crowded is a genuine design problem. Our solution — strategic use of banquettes, varied table configurations, and built-in elements — allowed us to hit capacity targets while maintaining the comfort and circulation clearances that make a restaurant pleasant to be in, for guests and staff alike.

The brief called for a Mediterranean feel — but the Tabule brand has always been more nuanced than that descriptor suggests. Our challenge was to honour that nuance. We did it through architecture rather than ornament: soft forms, a warm and restrained palette, and artwork that adds personal resonance without being decorative wallpaper.

In restaurant interior design, especially for Mediterranean and Middle Eastern concepts, there is often a fine line between creating an authentic atmosphere and avoiding overused design clichés. For this project in Oakville, our focus was on translating cultural identity into a contemporary design language that feels intentional and elevated. Rather than relying on traditional motifs, we explored materiality, proportion, and spatial composition to evoke the warmth and richness associated with Mediterranean restaurant design.

Balance & Rhythm

The colour story of Tabule punctuated by brushed brass accents, seen in the hardware and architectural trim, which introduce a soft metallic warmth without overpowering the space. These elements work in tandem: while the sage and oak provide a grounded, organic feel, the brass adds a layer of refined "jewelry" that ties the entire material palette together. The result is an environment that feels both curated and effortless, where every detail—from the door pull to the millwork trim—is present enough to be noticed, yet restrained enough to maintain the room's serene atmosphere.

The interior design masterfully balances texture and structure by pairing the organic warmth of light oak millwork with the delicate geometry of cane webbing. The reception area features a curved, sage-toned fluted tile base topped with smooth stone, establishing a tactile and sophisticated first impression. This rhythmic verticality is echoed in the dining area, where intricate cane partitions introduce a sense of "visual lightness," acting as a natural counterpoint to the solid, grounded oak seating. Together, these materials create a cohesive, "quiet" aesthetic that feels welcoming and contemporary.

Custom Artwork: Made in-house by the Sansa Team

One of the more unusual aspects of this project was the artwork program. Rather than sourcing finished pieces from galleries or print vendors, the Sansa team created and assembled the majority of the artwork in-house — in collaboration with artist Laura Carwardine.

Original paintings, custom collages, and bespoke framing were developed specifically for each location within the restaurant. This custom artwork approach within a restaurant interior in Ontario draws on the same subtle cultural references that run through the architecture: soft, expressive, unhurried. Nothing screams for attention. Everything contributes to the whole.

This kind of integrated approach — where interior design and visual art are developed together rather than layered on top of each other — is something we believe makes a real difference to how a space feels.
